Black Tea is green tea that is dried and 100% oxidized (fermented) to give rich reds to the colour. Flavour of black tea depends both on oxidization and the type of black tea. How do the nutrients and properties change as the leaves undergo this fermentation? The level of anti-oxidants will decrease. The darker the tea, the less polyphenols. With black tea, the natural oxidization process is helped along by rolling and thus bruising the leaves to stimulate the chemical change. However, there are still high levels of vitamins and minerals present in black tea. Intensity of flavour increases and rich red liquors appear; this intensity makes them ideal for blending with milk.
Many people refer to Oolong Tea as half green, half black. In truth, Oolong tea is produced by semi-fermenting tea leaves for partial oxidization. Oolong is essentially brought through about half the level of fermentation that takes place for black tea. Leaves destined to be Oolong tea undergo their own special cultivation and processing to create its unique properties. Black and oolong tea contain no sugar, no sodium, no fat and no calories...
