tea - white, green, black and oolong - begins as green tea (Camillia sinensis).
Flavours and properties of these teas are based on the fermentation process, if
any, that takes place after harvesting.
Green tea is not fermented, but generally heat dried (in Japan, the leaves are treated with hot steam for about two minutes) to stop the fermentation process. Enzymes contained within the Camillia sinensis plant will naturally begin fermenting unless this chemical change is halted. Teas are full of polyphenols or plant anti-oxidants that health experts believe fight harmful free radicals. These free radicals, if left unchecked, will attack protein and DNA cells. Matcha, Japan's ceremonial green tea, contains the highest level of anti-oxidants per cup. Green tea also contains many essential vitamins and minerals.
Camillia sinensis is native to China and can reach heights of almost 10 metres in the wild. Tea is now cultivated in many areas of the world including India (a strain of Camillia sinensis is also native to the Assam Valley), Japan and Sri Lanka. China produces the broadest range of green teas in the world. Many of these teas are so special only a few hundred pounds are produced each year. Green tea leaves are steamed, rolled or formed and then dried. Some green teas are rolled and tied to produce beautiful shapes or reveal a delicate flower as they open during infusion.

The production of white tea is different from other teas. The leaves come from a special variety of the tea plant (green tea) and are not processed but dried and withered in the sun. The name "white tea" comes from the downy texture on the underside of the early leaves. Only the top two leaves and a bud are selected for white tea, and picked at night only during the very first weeks of the harvest season. After withering and drying, these leaves are then painstakingly selected and sorted by hand.
White tea contains the greatest number of nutrients based on a number of factors including plant selection, processing and method of plucking.
